Cooking with Fire: Spicy meatloaf sandwiches with the Bensenville Fire Department

This morning we're "Cooking with Fire" at the Bensenville Fire Department, making spicy meatloaf sandwiches with twice baked mashed potatoes and roasted broccoli with firefighter paramedic Adam Sochacki.

Here's the recipe:

Spicy Meatloaf Sandwiches

  • Your choice of a hearty bread
  • 2-3 lbs ground beef
  • 1 package of chorizo
  • 2 eggs
  • Worcestershire to taste
  • Garlic to taste
  • 1/2 cup diced red onion
  • 1/2 cup diced green pepper
  • 1/4-1/2 cup beef broth
  • Bread crumbs to thicken
  • Fresh cilantro to taste

Instructions:

  1. Mix ingredients and bake at 350 degrees until cooked
  2. Slice meatloaf and place on bread top with pepperjack and bake till cheese is melted
  3. Place mayo on bread and complete the sandwich

Chipotle mayo

  • 1 cup mayo
  • Chipotle to taste.

Instructions:

  1. Whisk together and pepper jack cheese to top

Twice baked mashed potatoes

  • 5 lbs of russet potatoes
  • 1 stick of unsalted butter
  • 1 cup yellow onion
  • 1 brick of cream cheese
  • 1 cup heavy cream
  • 6oz cheddar cheese
  • Salt and pepper to taste
  • Paprika

Instructions:

  1. While the meatloaf cooks peel and boil the potatoes
  2. Save skins and season with salt and pepper  (bake skins till crispy)
  3. When potatoes are soft, mash potatoes and add heavy cream, cheese and cream cheese, salt and pepper to taste
  4. Dice yellow onion and sauté in butter.  Once the onions are translucent add to potatoes and mix
  5. Place potatoes in a baking pan, top with crispy skins, cheese and paprika
  6. Bake till cheese is melted

Smoked broccoli

  • Broccoli crowns
  • Crumbling cheese

Marinade:

  • Olive oil
  • I lemon / juice
  • 1/2 cup sliced yellow onion
  • Crushed red pepper
  • Minced garlic to taste
  • Salt and pepper

Instructions:

  1. Toss the broccoli crowns in marinade and place on foil or a baking pan top with cheese and place in a smoker at 350 degrees for about 30 minutes - can be placed in the oven as well if no smoker is available.
  2. Once everything is done. Plate and serve.
